Einkorn is one of the earliest forms of wheat cultivated more than 10,000 years ago. Unlike modern wheat, Einkorn has NEVER been hybridized. This means that it has never been cross bred with another plant. It is a diploid wheat (only 2 sets of chromosomes) whereas modern wheat contains 42 plus chromosomes. Emmer, another ancient wheat has 4 sets of chromosomes and spelt has 6 sets of chromosomes. More about Einkorn's genetics here.
EINKORN IS GOOD FOR YOU!
Einkorn contains more nutrients than modern wheat. It has 30% more protein and 30% less starch, along with more vitamins and minerals. Here you can see how Einkorn compares with modern variety wheat and why it is the most nutritious form you can eat.
WHAT ABOUT THE GLUTEN?
While Einkorn wheat does contain gluten, because after all it is a type of wheat, it is much easier to digest. The gluten in Einkorn measures the same as any other form of wheat, so no, it is not lower in gluten. It's just structured very differently. Glutenins and gliadins are the two types of proteins that form gluten. Einkorn lacks some of the high molecular weight glutenins that are present in high amounts in hybridized wheat. In part, this makes it easier to digest. Read more about the 'good gluten' here. Please note however, Einkorn is NOT ok for those with Celiac Disease and should not be consumed. In fact no type of wheat is.
Lastly, about that flavor! Einkorn is full of it compared to modern wheat varieties. It is light and slightly nutty, not only pleasing but full of nutrients that will nourish you!
